"If someone asked me what three things I would take with me to a desert island, it would definitely be pasta, good olive oil, and garlic"

With this sentence, in his website article "How I make fresh pasta", begins the newest culinary blogger Rojs (@pipars.lv). Rojs tried out the TESCOMA Delicia pasta machine available in RITO stores and prepared delicious recipes that you can make at home. Let's take a closer look at Pipars's recipe:

Pasta with garlic and herbs

Rojs (@pipars.lv) says: "I don't know if there's anything simpler than this recipe. If you've already made fresh pasta with your own hands, then the worst thing you can do is drown it in a complicated sauce. Forget about mushrooms, shrimp, cheeses, anchovies, and everything else for a moment. Enjoy fresh, freshly made pasta! And don't say it's complicated!"

INGREDIENTS:

for pasta:

  • 200g flour
  • 2 eggs
  • 2 tbsp good olive oil
  • 2 tbsp water
  • 3-4 cloves of garlic
  • parsley
  • good olive oil
  • salt, pepper

PREPARATION:

1. Prepare the pasta. Mix the flour with salt, make a well in the middle and crack the eggs into it, add oil and water. First, mix the eggs well with a fork, then gradually mix everything together with the flour. Knead the dough thoroughly until it is smooth. If it doesn't work, you can add a little more cold water - but only do it one teaspoon at a time, as it's easy to overdo it. Wrap the prepared dough in cling film and place in the refrigerator for 30 minutes.

2. Dust the work surface with flour, grease the pasta machine with oil. First roll out the dough as thinly as desired, then cut it into the desired shape. Roll the prepared pasta in flour and let it "rest".

3. Cook the pasta in a large amount of salted water for approx. 3 minutes. Fresh pasta contains starch, and if there isn't enough water, the pasta will simply stick together.

4. Slice the garlic thinly. Heat oil in a pan and fry the garlic until translucent. When the pasta is almost ready, add 8-10 tablespoons of the pasta cooking water to the pan, heat it up, and add the drained and rinsed pasta. Add parsley, heat for another 1 minute, stirring well.

5. Serve immediately.

Soup with fresh pasta, beans and bacon

Rojs (@pipars.lv) says: “This soup is very suitable for the autumn/winter season - it is hearty thanks to the fresh pasta and it cooks very quickly. And also - you can use leftover pasta here. Very convenient! I recommend adding chili paste for a kick.”

INGREDIENTS:
  • 400g canned beans (can be various types)
  • 100g bacon
  • 150g fresh pasta
  • 3 cloves of garlic
  • 1 small onion
  • 3 tbsp dried vegetables (tomatoes, carrots, bell peppers)
  • 1 sprig of thyme
  • 1 bay leaf
  • 2 allspice berries
  • salt

PREPARATION:

1. Dice the onion and garlic as small as possible. Cut the bacon into strips. In a thick-bottomed pot, fry the bacon with the onions and garlic. Add 1.5l of water, the sprig of thyme, bay leaf, allspice berries, beans with their liquid, dried vegetables, and boil for approx. 5 minutes.

2. Then add the pasta, salt to taste, boil for another 2-3 minutes, and turn off the heat.

3. Serve immediately. If planning to serve later, it's better to reheat the soup and then add fresh pasta, as the pasta will thicken it and may stick together. But it cooks so quickly that I recommend not doing that.
