Airita Jurcika's (ikstite) recipe: PEACH CAKE
Ingredients:

FOR THE DOUGH: 100 g butter 80 g sugar 200 g flour 50 g cottage cheese 3 egg yolks 1 teaspoon baking powder 1 pinch vanilla sugar 1 pinch salt |
FOR THE FILLING: 250 ml milk 300 g sour cream 50 g cornstarch 70 g sugar 300 g peach compote Vanilla |
FOR DECORATION: 3 egg whites 3 tablespoons sugar |

PREPARATION:
Prepare the dough:
Rub butter with sugar, salt, and vanilla. Add flour mixed with baking powder. While kneading, add egg yolks one by one. Spread the prepared dough into a cake pan.
Prepare the filling:
Bring 200 ml of milk with vanilla to a boil, mix the remaining milk with sugar and cornstarch. When the milk starts to boil, quickly stir in the cornstarch mixture. When the mixture has thickened, stir in the sour cream and sliced peaches.
Pour the prepared filling over the dough and bake at 180 degrees Celsius for 45 minutes.
When the baking time is almost over, whip 3 egg whites with 3 tablespoons of sugar. Spread it over the finished cake and continue baking for another 15 minutes at 150 degrees Celsius.
Allow the cake to cool. Decorate with various colorful sprinkles or nuts in glaze.
