Rhubarb season is in full swing! If we consider the old folk belief that rhubarb should only be eaten until St. John's Day, then now is the last chance to feast on these kings of May and June, which can be found in every garden.
You can prepare various delicious dishes from these plants - both sweet and savory. This time, we'll be making a salad and a refreshing iced tea. We'll be cooking and heading outdoors, because if the weather is as good as it is this year, then we need to take every opportunity to soak up Vitamin D in the bright sunshine.

Colorful Salad with Mozzarella Cheese and Rhubarb Sauce
For 4 servings you will need:
For the salad:
- Iceberg lettuce – 1 head
- Spinach – 50g
- Cucumbers – 5 pcs.
- Cherry tomatoes – 100g
- Radishes – 1 bunch (200-300g)
- Mozzarella cheese – 125g
For the sauce:
- Rhubarb stalk – ½ pc.
- Honey – 1 tbsp
- Olive oil – 50ml
- Rhubarb – black pepper salt – ½ tsp
Tip for a perfect result:
You can prepare the salad in advance, put the lid on the bowl, and pour the dressing just before serving.

Rhubarb – Peppermint Iced Tea
For 1-2 liters you will need:
- Rhubarb stalks – 2-3 pcs.
- Water – 1-2 liters
- Ice cubes – 8-12 pcs.
- Peppermint leaves – 8-10 pcs.
- Honey – 1 tbsp
Preparation:
- Peel the rhubarb stalks and cut them into thin slices.
- Bring water to a boil in a pot, add the rhubarb pieces and peppermint leaves, and simmer until bubbling and the rhubarb has softened (10-15 min).
- Then strain, cool, and add honey.
- Place some of the strained rhubarb in the thermos strainer.
- Put ice cubes in the thermos.
- Pour the tea into the thermos and go for a picnic!
