Fresh salad with sun-dried tomatoes

For 4 servings, you will need:

  • Zucchini 1 pc
  • Cucumbers 2 pcs
  • Tomatoes 2 pcs
  • Sun-dried tomatoes 50 gr

For the dressing:

  • Thyme leaves – 1 tbsp
  • Olive oil – 40ml
  • Salt and pepper 1 pinch

Preparation:

  • Cut zucchini and cucumbers with the Lurch spiralizer. Cut tomatoes and sun-dried tomatoes into small pieces.
  • Mix all dressing ingredients together.
  • Place all vegetables in a bowl, pour the dressing over them, and they are ready to serve.

Marinated zucchini and cucumbers

For two 0.5l jars, you will need:

  • Zucchini 2-3 pcs
  • Cucumbers 4-5 pcs

For the marinade:

  • Warm water 1-1.2l
  • Sugar ½ teaspoon
  • Salt ½ teaspoon
  • 9% vinegar 3-4 tbsp

Preparation:

  • Mix all marinade ingredients together in a measuring cup or bowl.
  • Spiralize cucumbers and zucchini with the spiralizer.
  • Place cucumbers and zucchini in jars, pour in the marinade, and seal.
  • Jars must be sterilized before filling.
