Fresh salad with sun-dried tomatoes
For 4 servings, you will need:
- Zucchini 1 pc
- Cucumbers 2 pcs
- Tomatoes 2 pcs
- Sun-dried tomatoes 50 gr
For the dressing:
- Thyme leaves – 1 tbsp
- Olive oil – 40ml
- Salt and pepper 1 pinch
Preparation:
- Cut zucchini and cucumbers with the Lurch spiralizer. Cut tomatoes and sun-dried tomatoes into small pieces.
- Mix all dressing ingredients together.
- Place all vegetables in a bowl, pour the dressing over them, and they are ready to serve.

Marinated zucchini and cucumbers
For two 0.5l jars, you will need:
- Zucchini 2-3 pcs
- Cucumbers 4-5 pcs
For the marinade:
- Warm water 1-1.2l
- Sugar ½ teaspoon
- Salt ½ teaspoon
- 9% vinegar 3-4 tbsp
Preparation:
- Mix all marinade ingredients together in a measuring cup or bowl.
- Spiralize cucumbers and zucchini with the spiralizer.
- Place cucumbers and zucchini in jars, pour in the marinade, and seal.
- Jars must be sterilized before filling.
