Karlīna Latsone: The Warming Power of Soup

Currently, with the long-awaited winter having arrived, we are looking for ways to warm up! In addition to warm hats and scarves, it is important not to forget that you can also warm your body with a fortifying and warm soup. RITO, in collaboration with Karlīna Latsone, offers simple tips on how to most conveniently and deliciously prepare a special winter soup!

Karlīna Latsone: "Soup is usually served as the first course/dish, and for good reason, because soup warms the body. They are popular and especially recommended in winter, when after enjoying winter fun all day, you can warm your body with a warm, hearty soup. In cold weather, I recommend warming your body with soups that are a little spicier, vegetable cream soups (made from autumn harvest vegetables), campfire-cooked soups... Soups are very diverse, and they can be made from almost anything – vegetables, meat, fish, grains, noodles, there are also sweet soups – from fruits, dairy products."    

Special Winter Soup!

Carrot, pumpkin, and ginger soup with toasted ciabatta

Ingredients: (4 servings)

  • 0.7‒1 l water
  • 1 vegetable bouillon cube
  • 500-600 g carrots, peeled, cut into small slices
  • 500-600g pumpkin, peeled, cut into small pieces
  • 1 tbsp finely grated ginger
  • 60 ml orange juice
  • sea salt to taste
  • freshly ground black pepper to taste
  • 1/2 tsp ground chili or to taste
  • 1 ciabatta
  • 30 g various seeds
  • 50g sprouts

Preparation:

Boil water in a pot, add the bouillon cube and boil until it dissolves. Add carrots, pumpkin pieces and cook until they are soft and the liquid has reduced slightly.

Pour into a blender, add ginger, orange juice, freshly ground black pepper, salt, chili and blend until smooth.

Preheat oven to 180 degrees Celsius.

Cut the ciabatta into slices and toast in the oven for 5‒10 minutes.

Pour the soup into a bowl, sprinkle with seeds and sprouts and serve with warm baguette.

Important tips!

When making soups, I first sauté onions, garlic, celery stalks (it's important that they are finely chopped) in the pot and then add whatever else I want. When the soup is cooking, all that's left is to set the table beautifully, pour the soup into bowls and sprinkle with herbs (herb scissors will come in handy here) and the meal is ready.
